Honestly, explaining that you think you were a real jerk, what made you realize that, going over in detail exactly how you were a jerk (trust me, she's gone over it in detail in her head), and explaining how you'd do it differently next time would probably do the trick. If you actually want to DO something, just plan something fun and "spontaneous". Casual time spent together doing something unusual and memorable. Go to the zoo or something.
