CCIE Routing and Switching Great book...PERIOD.

Internet Routing Architectures THE bible on BGP.

TCP/IP Illustrated. Volume I Great nuts and bolts.

There's more, but that's a pretty good start.

I seriously have to second all the books above, but also need to throw in the
CID book, this book
Cisco LAN Switching, bible of switching
those are my two recommendations... but the above list are absolute best.
