A few I can think of are:

Santana's She's Not There (originally the Zombies)
Hendrix's All Along the Watchtower (Dylan)
Talking Heads' Take Me to the River (don't remember)
Kula Shaker's Hush (Deep Purple)
Patty Smythe's Because The Night (Springsteen)

To the nth degree!

The hendrix version was cool, but it was ~2:30 long and had lyrics. The Vaughan version is like 8:30 long and is just guitar solos

SRV re-did a ton of hendrix songs. Voodoo Chile is another good one.
