Here's what I already have:
Crysis, Crysis Warhead(crashes alot, so i don't play it), Call of Duty 4, Company of Heroes, Orange Box, Far Cry 1 and 2, Fallout 3(crashes alot, so i don't play it), IL2 1946, Left 4 Dead(didn't like it too well), Warcraft 3, StarCraft, and World in Conflict.

What are some other good, stable games(Preferably FPS or RTS)? Stable as in it doesn't crash every few hours.

We can't suggest games because our results will be different from your results. I would recommend Fallout 3 to everyone because it has only crashed 1 time in over 60 hours of play, but you've had the opposite happen. There's no way to tell if a game will be stable on your system.

what's with this whole "stable" thing? I've been playing pc games for years and have yet to encounter much of this "crashing" you speak of. especially lately, couldn't tell you the last time a game I play crashed.

Stability is very system specific. Have you thoroughly stress tested your system? Run some Linpack and Furmark. The new OCCT 3.0 includes both.

I remember when no game besides max payne2 would work on my system. Everything else would crash within seconds, but i could play max payne for hours. I think it was a driver issue or something..

That's a strange thing. Did you ever try and upgrade your video card drivers? Which card were you using?

So long ago, I don't remember really.. either a geforce2 or radeon 8500 probably.. And yea, it went away after I reformatted and reinstalled my OS iirc.. Definitely an issue with my system, but ever since then I've always had a soft spot for the one game that worked.

Oh yea, even 3dMark would crash, which was supposed to use the same engine as MP2

If its crashing every few hours its probably your system.
However, Max Payne 2 is one of the most stable games I've ever played. Even when driver and system issues are making all my other games a pain, that puppy keeps going with no issues.

EDIT:
Oh, crap!
Looks like I was a little late to the party there.

The Steam version of X-Com 1 is very stable for me.

One thing to try for games that crash every few hours is to -exit the game- every few hours before it crashes. This lets Windows recover from memory and resource leaks in the game before they crash it.
