Most of mine have been mentioned:

All Eastwood "Spaghetti Westerns"
Butch Cassidy and the Sundance Kid
The Magnificent Seven
Unforgiven
Dances with Wolves
Blazing Saddles

Also, you have to watch Wyatt Earp (Kevin Costner & Dennis Quaid) and Tombstone (Kurt Russell & Val Kilmer) in one sitting to get the full effect.

Just go pick up the John Ford Collection DVD box set...and if you're seen tG,tBatU, don't forget about Fistful of Dollars and For A Few Dollars More, some of most integral films to the Spaghetti Western genre.

Don't forget Howard Hawks movies either.

BTW, compared to what it remade, the Magnificent Seven was poo. Rent The Seven Samurai sometime, but it does require reading subtitles.

Definitely get some John Wayne movies.

The Searchers
Rio Grande
True Grit
The Man Who Shot Liberty Valance

Others I like

Shenandoah
Bend of the River
The Outlaw Josey Whales
Unforgiven
Tombstone
Young Guns
Butch Cassidy and the Sundance Kid

I could go on all day, westerns are great. They're aren't so popular for nothing.

edit. After reading the thread, I also recommend Quigley Down Under. Great flick!

Deadwood is really good, but it's not really a western. It's about a gold mining town in the Black Hills of South Dakota. There are two seasons out on DVD, and the third is airing on HBO right now. The third season will be the last, but there will be two, two hour HBO movies to wrap up the series.

Open Range is really, really good. It kind of flew under the radar, but it's one of my favorite westerns now. The gunfight towards the end of the movie is very cool.

For a good fun western, Young Guns I and II are pretty neat. They loosely tell the story of Billy The Kid.
