There's gotta be some southern folk with good western style ribs secrets.

My current plan is to dry rub it with salt, pepper, czech grilling seasoning (hungarian-ish) and perhaps olive oil with garlic in it.

Any thoughts?

If you slowcook spareribs, you can use salt and pepper and they will be amazing. I use the oven since I don't yet have a smoker. 200-225 degrees for 4 hours or so for a slab of pork spareribs.

I season with salt, pepper, cayenne, sweet paprika, a little bit of brown sugar, and a little bit of MSG. With about an hour to go, I'll sometimes brush on a bbq sauce, but they're just as good dry.

What, I'm not good enough for you?

This thread made me want ribs, so I just seasoned some up and put them in the oven. Salt, pepper, chipotle, paprika, and a requisite touch of MSG.

Oh no, I'm just looking for variety of input.

My euro dry rub mix is literally identical to yours, so I was curious if there are any other secret tip/tricks :)

I hear some rumors about Worcester sauce and/or brandy?
