Hiya gang,

I've been working on quick and simple way of making steaks that doesn't involve those annoying and time-consuming steps like pre-heating an oven or lighting a charcoal grill. After some experimenting, I got the prep time down to 7 minutes! Cool! Anyway, here's my recipe:

Ultimate Bob's seven minute steak

Ingredients:

1) A steak, thin cut. We're talking under an inch thick here... anything thicker, and you're going to end up with a steak that's raw in the middle. Don't use an expensive cut of meat for this, either. Use Spidey07's steak method for those $20 steaks.
2) A skillet. Cast Iron preferred, but any skillet will work in a pinch.
3) Salt, Pepper (fresh ground is better), Garlic powder
4) Lea & Perrins Worcestershire Sauce (optional)

Directions:

Preheat the skillet by putting it on the burner with high heat for a minute. One minute is enough on my gas stove, but you might need more time for an electric.

Place the steak on the skillet, and leave it there for 2 full minutes. Flip it. If you did it long enough, it should be nicely browned on top.

Heat the other side of the steak for 2 full minutes. While you're waiting, season the steak with salt, pepper, and garlic powder. Flip it.

Turn off the heat, and let the steak sit for 1 more minute. Season the other side of steak while you're waiting, and flip it one last time. Let the steak sit for 1 more minute, and add some Lea & Perrins if you're a fan of it.

Plate it and eat it! If you did it right, it should be a nice medium rare. You can microwave a baked potato as a side dish in about the same time as it takes to make this steak, and cinnamon spiced apple sauce works as quick side dish as well.

Anyway... Give it this a shot, and let me know how it turns out.

Yeah, pretty much. Try cutting 30 seconds from the second and third step for rare, or add 30 seconds to steps 2 and 3 for medium.

Place a cast iron skillet into oven, set to highest temp (450-500). You could heat the skillet up before this on your stove, and just let it heat up more in the oven.

Rub some oil on the steak, very lightly. Kosher salt & Pepper. Place the very hot skillet on stove and slap the steak on for 3 mins. DO NOT move the steak at all. Flip, 3 more mins. and then place the skillet in the oven for 1-3 mins.

Let it rest for around 5 mins on a plate.

The key here is the very high heat involved. The higher the better.

Argh, that sounds really delicious. Unfortunately, I'm a big fan of BBQ and don't have any steak or coals :p. BTW, if you have a fire starter, use cardboard instead of newspaper; the coals get hotter faster and I've never once had the flames go out. I use ribeyes from Fry's with this method and they come out delicious and medium throughout.

That sounds like a great method though! I'll have to try it out sometimes

I prefer to make a spice rub for my steaks or marinade.

One thing that I do is cut a bunch of slits into a nice new york cut. Fill them with fresh chopped garlic cloves. I then make a spice rub with Majoram, Thyme, Rosemary, Savory, Sage, Oregano and Basil. Rub the steak generously on both sides with the spices and then wrap up the steak and let it sit in the fridge for about 4-6 hours. Or just season in the morning and leave it in until you get back from work or whatever. Then cook it on a grill or whatever method you like. Makes a good italian seasoned steak. No need for any steak sauce or anything else.

If you like garlic you will like that steak. I use about 3-4 cloves of garlic per steak.

EDIT: Those times sound like you'll get medium or medium well.

Yum, that does sound good! Little too complex for my lazy ass, though. I was shooting for a recipe so easy that I could make it during my lunch break.

You're losing juices (amount depending on the depth, length, and number of slits), in addition to suppressing the natural flavor of the meat.

There are many different ways to make a steak. I make them many different ways. This just happens to be one of the better tasting methods. It's quite tender and I don't lose any juices.

It seems like periodically someone on Anandtech posts 'their' method of cooking steak which is strikingly similar to Alton Brown's method of cooking steaks.. (Good Eats, Season 1, Episode 1)

Hey! My method is WAY different than Alton Brown's. I cut out all those oven steps, so I could get to the delicious pan seared goodness much faster :)

Honestly, anyone who does what you do to a good cut of meat is the ignorant one. It's fine to do to a chuck steak or blade steak, but you're just wasting a good piece of meat. But hey, if you think it tastes good, that's all that matters.

You're kidding, right? There are TONS of good beef merinades out there for spicing up cheap cuts of meat. Teriyaki, Spicy Tex-Mex, BBQ... I'm sure you guys can think of more.

Honestly, anyone who does what you do to a good cut of meat is the ignorant one. It's fine to do to a chuck steak or blade steak, but you're just wasting a good piece of meat. But hey, if you think it tastes good, that's all that matters.

It's not a waste. There are many ways to cook a steak that taste very good. This happens to be one of my more favorite ways. It does NOT taste just as good as "some plain old steak". I don't use plain old steak for much other than stir-fry or stew. If it is going on my grill, it's going to be a nice cut of steak.
