Wanted: good buffalo wings recipe

Anyone have any good recipes? it's my brother's birthday and he wants some wings. Due to our dietary situation( lots of people on a wheat free diet) they pretty much have to be home-made.

He wants them to be a tiny bit spicy(mild, he says) but not scorching hot.

There's only 1 real recipe for Buffalo wings: butter & Frank's red hot. Melt the butter, add the red hot to taste. Toss the wings in it.

There are lots of other recipe for wings, but real buffalo wings are with franks red hot.

hmm have to try that with them deep fried (just got one last month).

but yeah franks redhot and butter. mix to taste. it has great flavor and just enough kick.

what a coincidence, frank's is the only hotsauce we buy because it is gluten free :p

edit: I think half butter and half hot sauce is going to be too spicy...

Deep frying is the only way for wings. Crispy/crunchy on the outside, moist and delicious on the inside.

I didn't think anybody did buffalo wings anyway else? Baking/grilling or anything else just isn't right.

I usually bake them. then do them in teh sauce with a side of ranch. hmm m wish i had some now.

Buy some frozen wings, deep fry 10-12 minutes at 375. don't overload your fryer, if it's small do 6 pieces at a time. Even a large fryer can only take about 8-10 wings at a time. My turkey deep fryer can handle maybe 25-30 wings. don't overload it.

report back. If you want some kick sprinkle wings with cayenne pepper after you take them out of the fryer or add your favorite habenero sauce to the base (butter/redhot).

Most of the places I go bake theirs (I think - they taste the same as when I make them at home), and I think baking is better honestly. I'm pretty sure Hooters frys theirs (and uses some batter too), and one other place I go to frys them, but every other place tastes like they're baked.

Does anywhere know where to get Buffalo Bits? Boneless wings basically. There's a place here that does honey mustard buffalo bits with a side of blue cheese and it's to die for!

This is my recipe:

Half a stick of butter
1 large bottle of Louisiana Hot Sauce
Healthy portion of Garlic Salt
A few sprinkles of Black Pepper
A few shakes of Cayenne Pepper
A few shakes of Chili powder

Stir it up really good.

This is good for wings, but I actually prefer to chill it in the freezer/fridge and use it as a chip dip.

What kind of butter guys? Finding unsalted stick butter like I use in my bread machine or what? I've never done wings before but would love to try it!

yeah only one place frys them. but they are like little wings from kfc heh they are great.

all the other bake them then put them in the sauce.

still yummy though.

I've been doing some research, and it seems that butter tends to burn when fried. Hence the use of margaraine instead.

i was going to ignore anything else you had to say if you were talking about pre-made frozen wings.


yeah i get the frozen chicken wings. one package (2-3 lbs) is enough for a good meal.

Well this one can be really hot or it can be relatively mild. Determining how hot it is though is how long you let the mixture simmer to get the water out. More water = less of an impact:

1/2 bottle Frank's Red hot
1/3 bottle Tabasco sauce (for a bit more kick)
3-4 drops of Spontaneous Combustion (optional, this is a very hot sauce)
Dash of garlic powder
Splash of Worcester sauce
Splash of soy sauce

Cover and let it simmer for a little while. How long you let it simmer determines how hot it is. Towards the end add some corn starch to thicken the mixture. I use this mixture AFTER I have deep fried the wings. Weird I know but it works. How well it works dipping the wings in this mixture and then deep frying I don't know. It might work it might not.

EDIT: I initially said that tossing the wings in the mixture after cooking them was weird. After a few moments of thought I realized its one of you buggers that is weird tossing them in the sauce and then deep frying them.

You cook the wings and when they are done you toss with sauce.

Seriously guys, there's a few dishes I have mastered - good cuts of beef, BBQ pork, roast chicken and chicken wings. This is my specialty.

plain. crisps the outside. You have to watch your fryer though...experiment with 2-3 wings first to get the feel for it. there should always be fast and steady stream of bubbles around your precious as it cooks. That means your oil temp is good, best if you have a thermometer to see how the fryer reacts.

Judge by time and color and how the wing feel when squeezed with tongs. Season when out of the fryer, drain on wire rack for 1 minute and into the sauce they go. Serve when they've cooled to not 3rd degree mouth burn temp. About 5 minutes.
