Volume Mixer in windows 7?

Hello,

I have HDMI output on my video card, sound card, bluetooth headset, and SPDIF output. I was wondering is it possible in windows 7 to choose what program outputs to what sound output device. I noticed itunes is on the digital output and hdmi in the mixer, but it does not output any sound. Is there anyway to control this? Thanks
 
I have two soundcards installed and I have different applications set to run with each card. Most of the programs that I typically use have options for which output i want to use (my onboard sound shows up too).

I think most of that stuff will be application specific.
