How To VOIP intercom system

I have Ethernet cables running to most of the rooms in my house. My ISP provides a landline telephone number through GPON. The router has two RJ11 jacks for connecting telephones. I want to make use of the telephone number provided in my rooms through Ethernet cables as well as having a workable VOIP intercom system.

How can I do this?

Thanks. Can I use an FXO adapter to "convert" the POTS to VOIP?
