Voice control on Android (specifically AT&T Captivate)

I was really annoyed about the simlock on my iPhone when I was travelling in Europe and I'm thinking about a new phone which I'll be able to unlock to replace my iPhone 3GS.

I played with a Samsung Captivate today, and I messed with a Samsung i9000 Galaxy for over an hour in a Carphone Warehouse in the UK and I generally like the phone. The screen is gorgeous, the browser and OS seem fast (that was my primary complaint with Android before), the battery life is good, and my company's email system supports it now too (which was the biggest obstacle). But there's a couple of questions that no one could answer at the stores, and Google wasn't very helpful either.

But one of my big uses of my iPhone is as a music player while cycling - I bicycle to and from work most days - as well as voice dialing. So I'll be riding along and will say "play songs by Matt Nathanson" and it will start playing, and I can adjust the volume using the Apple earbud control and skip songs and pause it, as well as call people using voice control. Basically I have simple but fairly complete control over music and calls without ever touching the phone itself (which I bury in my backpack).

Can you do this on an Android phone? As near as I can tell, you can dial with voice control (can you do it without touching the phone?) but can you control volume and playlists and skip songs, and make calls all without touching the phone?

there is an app called "music by voice" that sort of works, but it is not native to android, and it didn't seem to work too well when i tried it a few months back. recent reviews look promising so i'm going to try it again.

edit: i'm talking about stock android. HTC sense phones may have this enabled, i'm not sure.

double edit: just found this app as well, seems to have more features than the one i mentioned above:

I just bought an AT&T Captivate last week. Not sure if i like it or not. Certianly an improvement over my Blackjack.

from what i have read from android forums, ATT or Samsung is coming out with a GPS fix for the phone. the Google maps gps app on it sorta works. Sometimes when i use it while in driving, it thinks i'm on a side street or some other random road in stead of the route that i'm.. it starts to freak out and give bad directions. I haven't use any voice related apps on it other than the google search voice app.
