All the Vista beta testing has been over for quite some time.
I think you can get a trial version of Server 2008
 
If you already own a Retail version of Vista, you can request a 64-bit DVD from Microsoft, and install it without a Key. That'll give you 30 days before you need a Key.

Otherwise, unless you have something like a TechNet Plus subscription, you'll probably have to borrow a 64-bit DVD from a friend and do a Key-less install using that.
