So I'm tinkering with VirtualBox and a Windows VM (Windows 10 64-bit).

Do I need a "new" Product Key for a separate VM "install" of Windows 10?

Technically yes, but you can get it set up and make sure it works without buying a product key. Then buy a key once you are sure you can do what you want with the setup.

If you connect a MS email account to windows 10 you can log into that on any windows 10 installation.
In Windows 10 (version 1607 or later), it is essential that you link your Microsoft account with the Windows 10 digital license on your device. Linking your Microsoft account with your digital license allows you to reactivate Windows using the Activation troubleshooter whenever you make a significant hardware change.
