Video card for 3007WFP setup

Thinking about pimping out my monitor setup a bit more and adding a 3007WFP to the current setup of 2x2001FPs on a Radeon X800GT. While I'd almost entirely be using this for productivity purposes (web development, web design, possibly some degree of futures trading), I wouldn't mind having the ability to do some gaming on it at somepoint. I have an XBOX 360 right now so I really haven't gamed at all in a long time, but I just want to leave it open as an option (I'd certainly be amenable to reducing the resolution of the game by 1/2 if it's going to help out discernably with the cost).

What's the best recommended route for something like this?

Also, on Dell monitors, would you generally get CompleteCare? I've never bought it on a monitor before, but I've never bought a 30" monitor before either.
