Here is the setup:
Two 6600gt's @550mhz core, 1145mhz mem speed
gig of corsair XMS C2PT@444mhz, 2.5-3-3-6 T1
3000 winchester@2.37ghz
two 80g sata raid 0
Aspire 500w psu

I cant turn any of the vid settings past medium with out getting major lag. It dont seem to be as bad on single player but online it is craptacular. Got the sli card in dual card mode and enabled in the bios(newest nonbeta) and 6.70 chipset drivers. Using Ntune to overclock the vid card and the newest driver from nvidia. Turning up the pci express bus helped but still choppy. I was able to overclock the cpu much farther with the 1006 bios but figured that maybe a newer version could improve the vid performance. A friend of mine has one 6800 ultra agp card that performs flawlessly with all vid settings on high. You would think that two x-press 6600gts could perform similar. My 3dmark03 score was way higher than his but his machine smokes mine online. What gives?
running resolution @1280x1024 due to thats the default for my panel. All vid settings@medium with aa off.

The BF2 game is supposedly poorly coded, so the slow-downs are likely related to your RAM. I have a 3000+ (stock speed) & a single 6600GT, and once I upgraded to 2GB of RAM my slow-downs disappeared.

I run 1152x864 85Hz , with everything at medium except txture filtering (set to high) and 2x AA enabled. Vertical sync & triple bufferring set to 'on' in the driver control panel.

FYI an added benefit of 2GB of RAM is that I am almost always the first person to spawn on a freshly loaded map, even on a 64 player server. On WakeIsland, for example, as USMC I'm usually spawn first and take a jet to the south beach base & start converting it before most of the Chinese players even spawn! Very nice.

Also, try using the tweaksrus drivers. They apparently increase your average frame-rate in BF2. I've used the 78.05 version and now 81.95 V2.
