Very few modules are approved by the MB manufacturer. Can I stray?

I am using the Gigabyte GA-Z77X-UD5H motherboard.

It likes 1.5V memory.

The only memory approved so far that is both DDR3 1600 and 8GB per DIMM is Part #CMZ32GX3M4X1600C10.

But, it comes in a kit of 32GB and maybe I only want 16GB. Also, I'm not happy that it is Cas Latency 10.

I have heard that this motherboard is very sensitve to the memory used.

Should I take a chance and try other memory? I have not been able to
find other owners whom say which 8 GB modules worked for them.
