anyone have any good ones? It seems all the recipe sites have are pastas, casseroles, and salads. LAME!

I'm looking for something a little more interesting than a meat dish with no meat...

to make it even more difficult, my girlfriend doesn't like tofu. and I don't feel like indian food.
 
I can't help specifically, but this Thai restaurant near me serves an AWESOME eggplant dish. From what I remember, it's just sauteed (sp?) with some basil and some kind of sweet sauce, served over rice.
 
There is a cookbook at world market. "How to cook Indian food with only 8 spices" or something like that.
 
Here is another great one: Hidden valley ranch fingers.

1) Take a loaf of french or italian bread. Slice in half lengthwise.
2) Mix 8 oz cream cheese with half a packet of dry ranch dressing mix. It helps to use room temp cream cheese or to microwave it for 20 seconds before mixing.
3) Spread the ranch cheese onto the cut sides of the bread.
4) Top with veggies. I perfer tomatoes, green onions, and red bell peppers. Also try mushrooms, chopped broccoli, shredded carrot, or whatever you like.
5) Cover with shredded cheddar cheese.
6) Bake and/or broil until cheddar is melted.
7) Slice into 1" to 2" strips.

Seven layer dip (there are many variations of this recipe):
1) Mix cream cheese with salsa (and optionally some sour cream). Put this as a first layer in a big bowl.
2) Optionally add a layer of refried beans to the top of the cheese/salsa.
3) Add a layer shredded lettuce.
4) Add tomatoes, onions, green onions, and black olive layers.
5) Top with shredded cheddar.
6) I make it more attractive with a dash of green onions on top.
7) Use as a dip with corn chips.

 
Google for Summer Vegetable Gratin. There are lots of versions. We made this one last week: Cooks Illustrated version. It was fantastic.

But the Spinach-stuffed Mushrooms were even better - I use my own recipe, but it is similar to this: mushrooms. I think my secret flavor ingredient is to use grated parmesan cheese in the stuffing mixture along with the breadcrumbs.

We also make a vegetarian chili - use any standard chili recipe, but instead of ground meat, use finely diced vegetables (mixture of carrots, celery, onions, mushrooms, whatever) sauteed till soft.


 
Palak Paneer

This recipe has more authentic indian spices, but then they mess it up by calling for Ricotta cheese. I used this recipe but used some Frozen Paneer I was able to find at the indian market. Really tasty dish, if you like spinach.
