I know USPS delivers on Saturday, but do the trucks/vans/swallows that transport mail from hub to hub work on saturday too?

I would presume so. If you can get mail postmarked (i.e. picked up) on Saturdays, then I would assume that it also gets transported somewhere on Saturday as well.
