USB ports in the car how to charge ?

No USB c ports in car

I know I could get a USB to USB c adapter to use with the cord that comes with my iPad Pro but does that work well?

Should I instead get a USB to USB c cable for the iPad Pro ?

So you don't have a USB A to USB C cable that you can use? Otherwise an adapter should work just fine...

What does the phone have? Lightning or USB C ?

If lightning, I would get a USB to lightning cable. If you don't buy it from apple, it will only be a few dollars. Most of the aftermarket cables work fine. Have a look on ebay.
