Say hello to e.coli, botulism, salmonella, listeria, etc. I think we're going to get a closer relationship to those food borne diseases (and more) than we ever wanted to.
There is a reason people used to cook the shit out of stuff to be near flavorless bricks (ie food safety not as good), but it seems the lesson has not stuck.

I used to really hate pork chops because my mom would cook them into barely chewable pieces of leather. It wasn't until like 5-6 years ago I decided to try one at a restaurant and it was really good.

I'll put some numbers to that.

Produce is the largest cause of food-borne illness (mostly norovirus). And it is the 2nd largest cause of deaths from food-borne illnesses. Meaning, no matter what your diet, your food is at risk if not handled and cooked properly.

Not arguing against veganism specifically but you're far more likely to get poisoned by vegetables at a supermarket than meats or dairy. Wet leafy vegetables can pick up shit anywhere, rather than from the animal itself.

Note that if you stick to certain veg you'll be better off, anything dried or root veg that isn't sopping wet for hours before you buy it are probably cool.
