I have a Dell E1705. Duo Core
I want to buy 2X1GB memory to replace to current 2x512MB memory.

I have no idea what to get.
All I know is that it is DDR2.

*Will I notice a difference from CAS:5 and CAS:3?
*What does it means PC2 3200 & PC25300?

I am upgrading because my games are lagging so this is mainly meant to increase performance.

Get online and connect to Crucial, and it will analyze your system and offer you what fits.

PC2 5300 is DDR2 667Mhz, where PC3200 is DDR 400Mhz. Your laptop is DDR2 so you should get a DDR2 memory. CAS3 would be the faster memory, but for DDR2, the norm is CAS 4 and 5. For 1 Gb memory stick and higher, it will probably CAS 5 as the norm. So get the PC2 So-DIMM for your laptop. I would recommend getting a PC2 5300 or higher.

Game lagging might not be the result of CPU and memory. Since it is a laptop, your video card is probably the one that is causing the lag.

which of these is faster?

1GB PC2 5300 CAS5
1GB PC2 3200 CAS3

I assume the first one. Looks like I will be getting that

The first is the fastest but will probably run at the stock FSB speed and ratio of your laptop anyway, so you will not notice a difference - which was the whole reason you are upgrading. Your laptop's video card is likely the culprit. Laptops aren't really well suited to gaming. Sounds to me like you'll need to dial down your eyecandy in games as the trade off for smoother performance.
