Upgrading from 975X E8400 to ... X58 and 920?

I run an 'old' 975X chipset Asus DH5 motherboard with an E8400 clocked to 3,4 GHz.

Also 4 GBs of RAM and just ordered my Radeon HD 5850 GPU.

Plan to do a clean install (2 Intel SSD 80 GB in RAID 0) with Win7 Enterprise.

Now I am considering whether to get a x58 board (reccomendations?) with a D0 920 CPU and 6 GBs of memory (reccomendations please).

Using watercooling on the cpu, I hope to be able to clock it close to 4.0 GHz.

Would this be a huge step up from my current setup or doesn't the mainboard / chipset (975X) matter as much as I say to myself it does...? After all, the motherboard is close to 3,5 years old...

My main uses include packing / unpacking (WinRAR), encoding / re-encoding, playing the occasional game and photoshop / video.

Your views upon this would be very much approved!
