Upgrade PC -SB and socket questions

Currently running a C2D E8400 with a Gigabyte GA-P35. I mainly just game, browse the internet, stream music and movies, Rip/Convert media and the occasional VM. I have done a little research and it looks like the current build would be a 2500k or 2600k with a P67/1155 board once the issues are worked out.

My main questions are:
Does anyone know what the main differences are between the P67/1155 and the x68/2011 chipsets/boards? I would like to build in the next couple of months but I don’t think the x68/2011 is coming out any time soon.

Since gaming would be primary which CPU would be better? The 2500k or 2600k

If I went with the 2500k or 2600k in a P67/1155 board now could I keep that CPU and upgrade to the x68/2011 later if I wanted to?

For gaming all you need is a 2500K and 1155. 2011 is going to be overkill for 99% of people who use a computer. 2011 is more geared towards the "Benchers"

Thanks to the bros on this board I have put together my new PC which consists of an i5 2500k, Intel DP67DE mobo, 8 gig G.Skill Ram, Gigabyte GTX 460 super OC vid card, WD 1TB SATA3... This upgraded from a Core2duo E6600 2.4 Ggz, 2 gig Ram, 9800 GT vid card and I do pretty much everything you do myself and This new setup is freaking awsome... It is by far the most noticed upgrade that I have ever seen personally and I have been a PC buyer from Tandy 1000 days and of course the old C64's... I listened to everyone on here and the few small bugs were worked out thanks to them and this thing rocks, nothing has slowed it down yet lol...

Honestly my biggest problem was the stock fan that came with the i5 2500k as the wires were to tight around the blades and actually keeping them from moving... After many suggestions that I tried from the bros on the board, we figured it out... This board gives some solid advice as they have some real pros in the field...

If thats what your needing then you should go for it... If you can avoid the SATA2 ports and use the SATA3 ports or one of the older connections you will not even have to worry about the recall and go Sandy Bridge all the way now, or you can wait a month or so and grab up one of the new ones that comes up for sale... An open box one was on New egg about an hour ago for like 89 bucks, which is a steal... They now have all the CPU's stocked (SB's that is)...

This setup I have now is rock solid, knock on wood lol... Im very very happy that I still went SB even after the fact of the defect...
