It's being used as my C: drive, so the utility won't even tell me what firmware I'm currently on. Is there any other way to check? Easy way to update?

If there isn't an easy way to do, are there some really good detailed instructions somewhere that I can follow?
 
I'll presume you're using Windows. Go into device manager>disk drives>vertex>details> pull down the property menu and select hardware ID. The last values after the underscores will be your firmware revision. This works for all disk drives.

But not in RAID mode.
