Right before the fight, Max Kellerman says something along the lines of "The current champ, Mason the Line Dixon versus the ex-ex-ex [sounds like XXX] champ Rocky Balboa"

Was this a reference to Sly Stallone's soft-core porn beginnings? Or am I reading too much into this?

I wouldn't be surprised if it is a reference. They make references like that all the time in movies.
 
Yeah, Stallone (writer, director, producer) of Rocky Balboa put that in there on purpose to taint his image.
