Ubuntu and VMware questions

Okay so my rig is a dual Xeon rig running XP. I am also running a demo version of vmware. First question VMware uses and simulates the processors you have right? So is it emulating both processors or not?

If it is, then I would I be better suited using an SMP kernel in ubuntu? If so which one. I went to synaptic and searched for smp, and like 15-20 things showed up. They all appear to be smp capable, with numbers in them like, 2.6.8.1, is that the kernel version? SHould I get the most up to date one?

2.6.8 would be a kernel version. Chances are there is one specially compiled for i686.

I'm not sure if VMWare emulates multiple processors or not though.

VMWare presents a very specific set of hardware and AFAIK the workstation version won't tell the guests about more than 1 CPU. The server virtualization products probably will though.
