Uber-Newbie question about air conditioning

Chances are that i am a complete dumbass, but i've also never had central AC before...

Anyways, in my dorms, we have an oldschool ac system, with an old thermostat (or whatever you call it, the thing that has a dial with 60-80 degrees on it). Anyways, how does it work exactly?

If set at 70, does that mean the AC will try to get the temperature to sit constant at 70? Or does that mean that once it hits 70 degrees, the system will go full blast?

The unit has an internal temperature sensor. when it senses that the temperature is 70 degrees, is shuts off.

It actually has a piece of metal that expands and contracts at different temperatures. When the temperature goes above a certain point, the movement of the metal causes it to make contact with another piece of metal and complete an electrical circuit that turns the AC on.
