This may seem a little nOObish, but I would like to use a Logitec MX500 corded USB mouse and a Logitec MX700 cordless USB mouse on the same computer. Is this possible? If so, will they both work together (obviously not at the same time)? I haven't tried it yet, but was wondering. Thanks.

Yeah, they will work just fine together.

FYI, I just purchased the Logitech MX Duo a few days ago that has the MX700, and still have my MX500 plugged in during the times when my MX700 is initially charging. No problems at all.

Yes, it's possible. Useful for when I'm going to be setting up my one computer for use on two different monitors in two different rooms.
