Hello, my question is this:
If I have two network cards ( or two modems ), and therefore two IP addresses, can I choose one of them like output for one application and the other one like output for other application. In others words can I choose the output interface for the IP datagrams?

Nope, that's all done by using the local routing table on the IP stack. Traffic goes wherever the routing table says it should.
