I've got the k7n2g ilsr with one 80 gig SATA HD running win xp pro. I want to add a second identical HD so the two are striped, and I have one virtual 160 gig HD.
I'll back it all up with a single external 160.

After installing the second HD, will I have to reformat and reinstall the OS? Or will I simply have to redefine the array and smoothly sail on from there?
 
You will have to reinstall. Otherwise the data won't be striped. Creating a RAID array is a data destructive process.

1) Ghost/Copy your current 80 gig drive to the 160 Gig PATA
2)Boot off the 160 PATA Drive and create your new RAID Array... then install any Drivers needed
3)Copy/Ghost the PATA Drive back to the new SATA RAID Array and set the Boot to SATA (Turn off the PATA Drive in BIOS)
You'll then have the 1st back up and in the new RAID Array
