When I plug in my iPhone - and yes, I know, you are asking about the Touch, but I don't have a Touch 🙂 - it acts like a USB drive. I can see the pictures just by clicking on the drive letter that Windows assigns it. Usually E:\ If I click on that drive, I can see the pictures just like as if I'd inserted an SD card into my card reader.
But I thought the touch didn't have a camera...? How did you get a picture onto it if not through iTunes? Are you talking screenshots? If I google a bit, it looks like the only way to get screenshots off of the Touch is to email them. Or you could jailbreak the Touch and then just browse through the files with something like Windows Explorer and pull the screenshots/photos off that way.
