As I mentioned in the topic title, haven't built a pc in a while (although upgraded my CPU 3 years ago). When taking into account some of the other components (monitor, speakers), I haven't replaced some parts in closer to 8yrs. So, this build is shaping up to be a complete re-build. Since I've been out of the market for a while, could use some feedback. In particular, I have a tendency to dive in with both feet when it comes to overkill, so some logic and reason where I most likely have none would be appreciated. My current planned build and recommended thread template...

PC Case: NZXT H700i ($195.80)
MB: ASUS ROG Strix E-Gaming ($205.00)
CPU: Intel Core i7-8700K ($369.99)
GPU: EVGA GeForce RTX 2080 ($799.99)
RAM: G.Skill TridentZ RGB Series 16GB (2 x 8GB) ($154.99)
HD (Boot): Samsung 970 EVO 512GB ($139.99)
HD (Storage): Samsung 860 EVO 2TB 2.5" SATA III SSD ($347.99)
Cooling: NZXT Kraken X62 Liquid Cooling ($159.99)
PS: Corsair RM650x PS ($89.99)
Monitor: ASUS ROG Swift PG279Q 27" ($697.99)
Speakers: Logitech Z623 ($99.99)

TOTAL: $3261.71

I am trying to future proof my build for a while, and would prefer to keep this rig for as long as I can, but I imagine that I have some silly decisions baked in (e.g., do I really need the NVMe boot drive? Is it a bad idea to buy an RTX 2080 at this point?) Any feedback would be great. Further info below.

1. My PC will be predominately for gaming purposes. I usually play RPGs, and dabble in FPSs. Also will use the PC for productivity purposes, but gaming #1 priority.

2. My budget is probably topping out at around $3,000, but that includes Monitor and Speakers. Always interested in it being less. :)

3. Parts will be purchased in the US.

4. N/A

5. As far as brand preferences, I usually prefer the Intel/NVidia brands.

6. I don't think I will be using any current parts, but I could be wrong. My GPU is a NVidia GForce 970GTX, my CPU an Intel i5-4690K, so both probably not an option. Have a 128GB SATAIII SSD as my boot drive but even that seem small now.

7. Would love to overclock but not completely sure I know how to do it.

8. Am aiming a monitor resolution for 2560x1440p with 144mhz refresh rate.

9. Probably will wait to build until at least January, but could start getting components over the holidays if some deals pop up.

10. Would look to install Windows 10 OS and use Windows 365 office suite.

Thanks in advance.

Intel's K series CPUs don't come with a HSF so you will have to buy a aftermarket one.
