Can anyone tell what's the purpose of a chassis cab truck? Don't you lose a ton of functionality by not having a bed? What does this configuration do for you?

That is a high dollar california hauler for a really big 5th wheel.
Note the side height. It can carry a low bodied trailer, with more room in it over the hitch portion.
It was never intended to be loaded with stuff.
 
A chassis cab Is generally purchased without anything on the back. There are people that build everything from tool box bodies to campers you can bolt onto them.
