What exactly would be required for a triple screen 120hz (1080p) 2 way SLI setup?

Which outputs must the graphics cards have?

Also, what inputs are required on the monitors? Does one or more of them have to have DP?

Probably very few games would be able to run at 120fps, but 85fps+ should be doable for quite a few.
 
3x1080p is effectively 3/4 4K. So you need 5760x1080/3240x1920... 6.2m pixels before any AA sampling. Are planning on ultra settings across the board for all games or are you willing to make sacrifices in quality to get the desire frame rate?

Seriously, you should compare 4K performance using this and let it guide your decision.

If you drop to medium-to-high settings (not ultra), depending on the game, GTX 980 SLI or 295x2 can probably get you where you want to be.
 
Back in the day I had 3-way 120hz monitors, I used Nvidia Surround and all I needed was three DVI cords to pull it off.
