Travel sites driving me crazy - need help figuring out how to book flight + hotel

I will be driving to Dallas and my wife will need to fly in to meet me. I will need a hotel for 2, but a plane ticket for 1. Also, she will ride back with me so the plane trip needs to be just one way. On any of the travel sites (expedia, travelocity, priceline..) you have the option of buying either a one way ticket with no hotel, or a two way ticket with hotel.

How do I buy a 1 way plane ticket for 1, and a hotel reservation for 2 without just picking them a la carte which seems to be much more expensive?

1) Fly SouthWest. Usually cheaper than those sites on their normal prices. Especially when you consider that the other airlines you have to pay for bags + other things.

2) AAA and other such discounts are usually better than those sites. They have to take their cut you know. Since you're only buying a flight + hotel, your discount options are limited at those sites because they discount packages more.

I don't think hotels really charge more as rates are usually based on 2. Also its your wife so no need for separate beds, so I say just book the room for 1. When you get there just have your wife come in.

This is how I do it.

Book 1 way flight trip via Southwest or AA or whatever airline is cheapest via its own website.

Book 1 room hotel with king size bed with Courtyard for $50 per night.
