Toppings go under the cheese or above the cheese on a pizza?

You have to be more specific when you say Chicago Style pizza. There are several different "Chicago Styles". Deep dish, ultra thin crust?
 
Given only one choice, I would say above the toppings: first of all to hold them all together (because I want EVERYTHING on my pizza), plus, I like my cheese browned under the broiler.

My usual MO though, is both: under and above.

On the rare occasions I make my own, rare because it is too good, (read too expensive) , I put the topping under the final layer of cheese like so:

Top to bottom:
Moz and Provolone Cheese (thin slices)
toppings - sausage and pepperoni (pre-cooked), onions, peppers, mushrooms (thin-sliced), parm-romano, fresh grated
Sauce - added garlic
Moz Cheese - shredded
toppings - sausage and pepperoni (pre-cooked), onions, peppers, mushrooms (thin-sliced), parm-romano, fresh grated
Sauce - added garlic
Moz and Provolone Cheese (thin slices)
Crust
Cornmeal

20" pizza
Total weight ~ 4 pounds
 
I don't care at all. As long as they're on/in/around the pizza, I'm good. the only exception is when any of the toppings are something I hate; in which case I prefer them ABOVE the cheese so that I can see them and remove them.
 
Anyone who puts the toppings anywhere else but on top is a Communist and deserves no less than a lifetime of suffering.

Also I like my toppings on top of the cheese.
 
cheese itself can be a topping...

So while most of the toppings should be on top of the cheese... any pizza which includes extra cheese as a topping, the extra cheese should go on top...


however as a business practice at most of the pizzeria's i have worked at, make it a policy to put all the chees eunder the toppings, so the customer can see the amount of toppings on the pizza and feel like they get their moneys worth... pizza shops who put the toppings under the cheese are hiding something, and the customer can possibly feel ripped off... skimped toppings.
