Soft scrambled eggs with real shaved truffle is easily one of the greatest and simplest egg dishes ever created; if I were to able to have whatever I wanted, that's what I would pick.

I don't think that's an egg dish anymore. Let's face it, anything with some white truffle on it is going to be pretty good. You could probably leave a raw fast food burger out in the sun for a day, shave some truffles on it, and at least have me consider eating it.

It depends on your definition of "over easy".

Around here, I order Over-Medium.

Sunny-Side-Up is cooked on one side only.
Over-Easy is cooked long on one side, then briefly on the other.
Over-Medium is cooked on both sides, but liquid center.
Over-Hard is long cooking on both sides, yolk is totally cooked and non-liquid.

I think the Salonella fears are way overblown. Only one out of 10,000 eggs have internal Salmonella (CDC Source). Meaning if I drank one large glass a day for the next 82 years, I'd likely come across ONLY ONE contaminated egg. Even if I assume that I will get infected by that egg (unlikely since I'm healthy), I'll have to do this for 389,041 years to have a chance of getting a life threatening case. But since I'm young and healthy that is more like 3,000,000 years until this raw egg poses a threat. Driving to work is far more likely to cause harm than drinking daily raw egg in this receipe.

Was not worried at all. #1 I don't eat plain white eggs thay have been bleached. I eat cage free brown eggs. No threat with those.

I like any kind of fried egg, but cheese omelette is probably my favorite. I'm not a huge fan of boiled varieties.

Scrambled. It's just a pity that most places make such crappy scrambled eggs. I usually have poached when I go out though, eggs benny FTW!

Get my eggs straight from the chicken. Sometimes, I find a hidden nest with 8-10 eggs in it. Since all the eggs are fertilized (I have roosters), if in doubt, I crack one open to see if the hen has started setting on them. If it's good, then the others are good. I just leave them on the counter top (not refrigerated), occasionally as long as 3 weeks. (Without ever washing them.) Washing them removes a protective layer of something that's on the egg which keeps bacteria outside the egg.

Since the OP had loaded omelets as a choice, I had to go with that one. Nothing beats a 6-egg omelet, with cheddar cheese & loaded with bits of medium rare NY Strip steak. And maybe some onions that have been cooked down perfectly. MMMmmmmm

I've been poaching eggs lately. Its pretty easy to do in the morning when I'm still half asleep.
