Well, the Canadians use back bacon (the loin sliced thin & smoked, resulting in the same flavor as bacon, with barely any fat.) I prefer Canadian bacon over regular bacon by a hair. But, yes, I generally pick the package with the least fat. Or, there's a brand at my local grocery store that's often on sale for $1.99 a pound. Sometimes it's far leaner than the average bacon, sometimes it's not. If it's a little fatty, then I only use half the package of bacon (when I cook for 3), and after it cooks down, I add in thick slices of ham. ($1.68 a pound - real sliced ham, not that deli-sliced processed stuff.)

unless i am mistaken, isnt Canadian bacon the same stuff that is essentially Ham? Cause if it is then its nothing like bacon.... however maybe what we call Canadian bacon around here is different from what you are referring to.
