quick question which i was never clear about - If I have a full backup with time machine and the HD dies on the main machine, will it be able to restore everything to that state when a new drive is put in?

As long as your drive with the Time Machine backup doesn't crash, then yes it will go to your last backup timestamp.

You should be able to use your recovery disk to apply the backup to the new drive.

now the recovery disc, does that come with the computer when you buy it or is it something you have to create using time machine?

you just boot to your Leopard or Snow Leopard disc, and instead of installing you'll tell it to restore from your Time Machine. Not sure if Macs come with physical media though. You cannot create one using Time Machine.

ok thanks, i'm clear now. If the original discs aren't handy i'm sure it won't be too hard to track down another copy of leopard.
