Yes, your PSU should still work. You might be able to add it to your PC Part Picker list and it will tell you which cables you'll need. Should be 24 pin, 8 pin EPS, 1 8 pin and 1 6 pin PCIe.

I don't see any glaring issues with your list.
 
Newegg once in a while has good bundles. I'd target Black Friday deals unless a slick bundle drops sooner.

I'm all for reuse, but a 21 year old PC case is kinda pushing things?
 
The case isn't even the oldest component. The keyboard is an IBM AT type F and one fan is a Panflo 120mm from 1985. 🙂
 
It's not the absolute age, but whether that case is good enough to use for another decade? I mean as far as design (front I/O) and cable management. If you're happy with it, that's fine.
Nothing wrong with a classic IBM keyboard; am curious how much a 120mm fan cost in 1985 dollars. 😉

I feel like there have also been improvements in internal organization and airflow arrangements for cooling. (Of course, some of that comes at the expense of 3.5" and 5.25" drive bays).
