It wouldn't matter on walls at all. In fact I think natural tile products look better anyway if they show a little variation. I would pay attention while setting to not place the thickest pieces directly adjacent to the thinnest.

Keep in mind that the tile and grout themselves are almost meaningless when it comes to waterproofing a shower. Who ever does the work should follow the procedures set out in the TCNA Handbook for tile and tile backer installation. Showers are one of the few places in a house where mistakes can have real financial consequences.

Its fine.

But make sure they use the correct waterproof board (NOT drywall) like hardibacker and also use a good sealer on the tile and grout. I like enhanced sealer for natural stone as it gives it a wet gloss look.
