yes u can power 3 monitors on 2 nvidia cards with the new drivers.

Just to be clear you are planning to use the 3 monitors for surround gaming, so the game uses all 3 at once? Or do you intend to only game on 1 monitor while the other 2 are used for other apps like web browser or movies?

If you are doing surround gaming you want the best pair of video cards you can afford. You can't go overboard enough for triple monitor resolution. I'd at least get a pair of GTX 460 1GB cards like mnewsham suggested.
 
If it's not for gaming, those cards are overkill and also overpriced.
If it is for gaming they are underkill and also still overpriced.
