i saw something on TV that this guy was playing nascar and his middle monitor was the road ahead, left monitor was out the left window and the right monitor was the right window. i figure this is possible to set up with nascar fairly easily, but what kind of video card/setup would you need to pull this off?

a Matrox Card like the Pharneila will pull it off with 1 video card and the Matrox Surround Display software.(A lot of games beside nascar support it like all Quake 3 engine games)
Otherwise you'd need a strong card ATI/Nvidia card to power 2 monitors, A weaker card to power the other monitor and some 3rd party software to put it together.

This requires either the Matrox card as mwmorph mentioned or a multi-video card solution. I would recommend by the same manufacture to simplify driver issues.

However most games do NOT support multi-monitor setups natively you will most likely have to edit some config file or registry entry to make it work.

Here are some links that you may find interesting.

However it maybe a better investment to consider the a widescreen display as games will be more quickly accepting of the widescreens vs the multi-monitor solutions.

if yuo go matrox. quite a number of games support surround gaming.
All Quake 3 engine games should support as well as most Unreal Engine 2 games. The list goes from Age Of Mythology to X-Plane.
The only downside is that it's slow. the Pharnelia, the top of the line matrox isabout as fast as a Geforce Ti 4200 or so. It's not as bas as that looks though since it handles Fragment AA and High resolutions/multi monitor with MUCH less performance degradation percentage wise.
