so, already bought plantains to fry, rice, black beans, etc.

need to clean the big pack of chicken thigh, marinade and use a good jerk rub.

too many jerk rub recipes out there. what's your favorite? and intensity of spicy hotness?
 
this is a spicy one.
1 Tablespoon ground ginger
1 tablespoon onion powder
1 teaspoon powdered mustard
1 1/2 teaspoon ground allspice
1 1/2 teaspoons ground thyme
1 teaspoon ground habanero
1 teaspoon garlic powder
1 teaspoon ground cloves
1/2 teaspoon coarsely ground pepper

Combine all ingredients and let sit for an hour before using.
Store in a tightly closed jar in a cool place.
