I already have a B.S. in a certain area from School A.

Lets say I want to begin study at a School B in another area completely divergent from my B.S. degree.

How do I do this? Are all my Undergrad "core" courses essentially waived and I only would take the specialized courses to obtain the new degree?

School me friends.

Check with school B. They will be able to tell you which classes they accept as transferable. But yes, you pretty much don't need to retake the basic undergrad English/Math/history classes if your school A is any good and recognized by school B.

If you took something similar but are not transferable, some schools let you 'challege' the classes where you get permission from the prof and take a test, if you pass, you don't need to sit through it.
