Things to do in Dubai...

So, next Saturday I leave for a trip to Dubai (followed by two weeks in India).

I am going with my family so I would like suggestions on what to do while there. Is it better to book early or wait til we get to the hotel and the hotel book things for us? I found during my trip to Australia that it was better to have the hotel do it for you since you usually got a slightly better deal than the direct website.

These are the things that I know I will be doing:

1) Arabian Nights adventure.
2) Sandboarding.
3) Indoor Sky park.
4) Shopping with my parents.

So what else?

Also, It's going to be my birthday while I am there. Anything special that we can do that is family friendly, then once my parents go to sleep something to do that is not-so-family friendly?

Lastly, anyone on this board living in Dubai and free to grab a drink or be a tour guide?

I think DivideByZero went there a couple years ago, maybe he'll have suggestions (that don't involve your doom)
