I've done one screw per drive many times. It isn't like the drive needs more support. The one screw just keeps it safe when moving the computer around.

The best picture is the last one with the sound card.

In most modern cases, sure, there are rails that hold the drive flat even with no screws. As you can see in the pic though, the drives are hanging at an angle, so that case does not have those rails, and at least two screws are necessary.
 
I have seen minidiscs placed into floppy drives on a few occasions...

Very tough to get out without ruining the disc..
