"these ones" - is that proper grammar?

It is similar but I think "those ones over there" makes sense, but "these ones over there" doesn't since the "these" implies that they are here and not there so "these ones over here" would make sense.

Unless you're talking about just "these ones" in which it is grammatically correct.

These ones and those ones are acceptable gramatically. However, in typical usage, it sounds less awkward to omit ones and simply say these or those.

Nope, incorrect. My mother's a teacher, I've had it pounded into my brain for decades. The phrases "these ones" and "those ones" are redundant. Like saying "ATM Machine".

The phrases have become sufficiently widespread that they are in common use, but they still represent a sloppy approach to grammar.
