Spend the last 2 days preparing these..

Full rack of hickory smoked Kansas City style pork ribs.

Half-way there... only another 2.5 hours to go.

What are you having for dinner? :D

EDIT: Well 6:00pm came and went and I am stuffed. Ribs turned out excellent.

Mmm leftovers

After almost 7 hours of work I learned a few things...

1. Use an oven thermometer while you are cooking. Keep it in the BBQ.
2. Don't lift the lid more than once an hour. (Less is better)
3. Don't throw new coals into the BBQ, set them gently.
4. Invite people over to eat with you because a full rack is way too much for one person.

2.5 lbs of live Maine lobster here. Just finished boiling. I'm waiting on the corn...I can't wait.

The two days were simply spent prepping the rub and the new grill. No more than an hour or so total.

These are the first ribs I have cooked on my new Weber. I haven't cooked over charcoal in about 7 years. Been a propane guy simply for the convenience but have come to enjoy the process of charcoal.

The hardest part has been getting the small amounts of charcoal hot enough. I have a chimney starter that can start 75 briquettes but I only need to start 8-12.

I always did my spare ribs at 225-250 using the 3-2-1 method but I just heard that 300 using the 3-2-1 will create ribs more to my preference, a little bit of pull to the meat.

I'm about to grill two pork tenderloins, eggplant, zucchini, and flatbread. Mmm...
