Just to celebrate that we - my kids and I - survived 2000 we threw a party: 112 friends and relatives (very many more friends ... ;) ) in a castle in Stockholm, fireworks which lasted 19 minutes without a break, a 5 course dinner, live musicv by one of the best classical performers (Gunilla v. Bahr - listen to the intro) and live dancing music. The party lasted from 7pm to 5 am and everybody was really, really happy ...

Smoked salmon all day.
I reek of hickory, cherry and other fruit wood smoke.
Going to sleep.

My son and I cut a truck-load of standing-dead hardwood today for firewood. I then cut to length and split the larger pieces and my son stacked it this afternoon. The weather was beautiful!

Stats? I'm looking through for pictures of this party you threw! 112 folks, fireworks. Wow, that's amazing. :)

I think that would make petrusbroder the official entertainment director for the fort. :)

:) Awesome. My wife, mother-in-law, brother-in-law and his girlfriend, and I attended the Renaissance Fair for a day this weekend. We went through and bought most of the stuff we were intending to, so that when we go back next weekend, we can focus on attending the shows and other things. Did get a chance to take lots of good pictures, and it was of course a blast with the company present. :) Good times.

It takes two days to smoke up some salmon.
One for the brine, one for smoking, cooling & vacuum sealing.

Yesterday we had a combo autumn party and birthday party for our oldest daughter.
I made smoked salmon 'dip' or more properly 'spread' consisting of:

Smoked Salmon
Cream Cheese
Mayonnaise
Green Onions chopped
Red Onion chopped
Garlic minced

Then I quartered some bagels, making them the proper size for finger food.
Everybody loved it, and the quart of spread was all gone by the end of the party.
